Agricultural production of fats and oils makes up roughly 7% of global emissions. Savor is aiming to change that.

The Bill Gates-backed startup is harnessing elemental earth science to molecularly mirror fats without the massive land, water, and fertilizer inputs of agriculture. Savor converts captured carbon dioxide and methane into fatty acids, which are then rearranged to form triglycerides that make up fats like butter, palm oil, and cocoa butter. This is an entirely new frontier for food that goes beyond the constraints of taking energy from other organisms. The potential implications for both climate health and supply chain security are profound.
